Founded in 1926, Hong Kong Noodle Company has been an integral part of Chicago’s China Town. We have been owned and operated by the same family since Ernest (Foo Bing) Chung and Harry (Pang Bing) Chung decided they could provide an important service to the Chinese Community in the area. The two brothers were born in Canton China in the late 1880’s. After working in a noodle company in their home town they decided, like millions of others, that the United States of America was a place where they would make their dreams come true. They came to America at the turn of the century and made San Francisco their home for a couple of years. Seeing that there were opportunities to make more money working on the railroad they made their way east. Ernest worked on the rails and Harry worked as a cook for the railroad where he refined his noodle making ability in some of the harshest places in the U.S.A Early in the 1920’s Harry and Ernest settled in Chicago’s China Town and started making noodles and other ethnic items. Supplying to the local residents at first, the quality of the noodles these men made soon became apparent to the restaurants in the area and sales increased to the point were in 1931 they incorporated and formed Hong Kong Noodle Company. Their first location was 152 W. Cermak. They lived and worked in the same building and made deliveries by street car. In 1953 the City of Chicago told them they had to move. The city was adding stops their El Line and needed their property. That location is now a CTA train stop. They moved to their present location just a few blocks away in 1956 and have been in continuous operation since then. Their grandsons still operate the business to this day and have the same belief that their ancestors had, Give the customer a quality product and they will keep coming back.
